Located at 1,450m Monterrey enjoys 100% fertile, humid soils thanks to the underground aquifer reservoirs. The moist soil, accompanied by constant winds, create a climate of low temperatures ideal for the growth of quality coffee.
Finca Monterrey Estate grow high-quality coffee, predominantly Borbón but also other varieties that they have developed over several years.
Coffees are cultivated in the Apaneca – Lamatepec mountain range, in Ahuachapán, in an biodiversity-friendly environment. Coffee beans are processed immediately after they are picked. Great care is taken during pulping, fermenting, and washing to ensure the quality of the coffee is maintained. Clear water from natural springs in the area is used to wash the coffee before sun or machine-drying.
Every batch is sampled to verify its quality. Coffee is then stored between 11.5% and 12% humidity for aging before it is finally prepared for export.
The coffee is cultivated under the shadow of native trees. They also use the shade of a variety of Inga type plants that also serve to enrich the soil. They maintain a soil-plant ratio that generates an environment which conserves the local fauna. The estate is an important source of oxygen and water production as well as a safe habitat for local biodiversity.
All their coffee plantations receive adequate care against diseases through eco-friendly products, especially through biological and cultural systems that avoid damaging the environment.
